“Gavin’s gluten-free, dairy-free, sugar-free Amazing Rock Cakes” 

Lord Gavin McLeod-Valentine’s Amazing ‘free-from’ Rock Cakes

If you check out @lordgmv on Instagram you’ll find the wonderful Lord Gavin McLeod-Valentine: red carpet skincare expert loved by the likes of Olivia Coleman to Kendall Jenner, who has also recently been battling with his own cancer treatment throughout the pandemic. He’s amazing.

Gavin is one of the most positive beings on this planet, a champion of kindness and support to all his friends and colleagues both sides of the Atlantic; so much so that, even while self-isolating, he shared the above ‘free-from’ old family Scottish recipe for Rock Cakes (his photos too, thanks baby), in honour of #TheNana, that are Paleo, making them healthier and easier to digest (less stressful on the gut), and ideal for anyone following an anti-inflammatory diet free from sugar, dairy or wheat gluten.

How To Bake ‘Gavin’s Amazing Rock Cakes

THE RECIPE


Pre-heat oven to 350

2 cups Paleo flour (Cassava, Almond, or Coconut) 
1 tbsp Baking powder
1 tbsp fresh lemon or orange zest
1/2 tsp Cinnamon
1/8 tsp Ground Clove


Mix together in a bowl

Add: 1/2 cup butter of choice, Gavin uses SOY free Earth Balance but any plant-based alternative should
work. 

Electric mix together until crumbly looking

Then add: 
2 Eggs
1/4 cup Honey
1 tsp Vanilla Extract

Mix again, keep texture rough, not smooth 

Add: 1/2 cup raisins (but can use dried fruit of your choice) - or Jo likes hazelnuts

Stir together with a wooden or big spoon. 

If you want extra sweetness you can add 2 TBSP of your sugar substitute of choice, Gavin uses Swerve which is a blend of stevia and monk fruit. 

Hand roll into 9-14 balls depending on the serving size you want. Place on greased pan
& cook for 15-20 minutes or until lightly golden.
